Though a lesser known carotenoid, lutein is quickly gaining in popularity. Based on a comparison of vegetables, lutein is found at higher concentrations than beta carotene in broccoli, spinach, brussel sprouts, cabbage, green beans, kale and winter squash.
In the human body lutein is specifically deposited in the macula portion of the eye.
